Ingredients: Tofu Shirataki Noodles

Okay, so. Let's talk about tofu shirataki.

Noodle substitute with shirataki (yam flour) and tofu (cheese-like soy). Low-carb, for those of you who care about that. Twenty calories a serving. Not much flavor, highly versatile. Kind of rubbery texture compared to actual pasta, but nothing really weird. Great low-cal noodle substitute.

I've only seen it available at Whole Foods (in the refrigerated section with other tofu products), but if you can find it and not be afraid of it, totally check it out. Best paired with some really strong flavors, as it's quite bland. Would be good in a veggie broth for ramen-like noodles. :D
